What is Frenching?
Frenching is a technique involving the removal of meat and fat from the ribs, typically done to create hand-held "chops." This method of trimming is often favored by certain butchers for enhancing the presentation and handling of the meat.
The choice between frenched and un-frenched primarily boils down to personal preference. However, we recommend that if you prefer the presentation and convenience of a frenched rack of lamb, it's advisable to purchase it already butchered in that manner. While it's possible to remove the rib meat yourself, achieving the finesse of the cut is often best entrusted to a professional butcher.
