Lamb Flank

Lamb flank is a flavorful cut taken from the lower abdominal or belly section of the lamb, located between the rib/loin area and the hind leg. It is separated from the front, leg, and loin during carcass fabrication and is one of the thinner cuts from the side of the lamb.

Known for its rich lamb flavor and higher natural fat content, lamb flank has a slightly firm texture and benefits from slower cooking methods that allow the fat and connective tissue to become tender.
